Cheesy Egg White & Broccoli Muffins

Delicious cheesy egg white muffins are the perfect on-the-go breakfast! They’re high in protein, low in fat and downright delightful.

Ingredients

  • 10 large eggs
  • 1 tsps sea salt (or enough to taste)
  • 1/2 tsp black pepper (or enough to taste)
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1 and 1/2 cups broccoli steamed and chopped (or frozen and thawed)
  • 2/3 cup Universal Grated Tasty cheese, plus more for topping

Method

1. Preheat oven to 200°C (400°F)

2. Line 12 muffin pan with silicone liners or coat with non-stick cooking spray. Set aside.

3. In a mixing bowl, crack eggs and whisk together salt and black pepper. Whisk in garlic powder and thyme until combined. Stir in broccoli and Universal Grated Tasty cheese. Divide evenly into muffin tins filling each about 2/3 full.

4. Sprinkle with more cheddar if desired. Bake in a preheated oven for 12-15 minutes, or until set.
